Edited version of your part list. Just some recommendations to bring the price down a little while still maintaining the close to the performance area yeh want.

Some people prefer a challenge, I just band my head against a wall until my method works...

Neither the H80 or H60 is good enough to handle 8600k or 8700k when overclocked. Either those huge air coolers (NH-D15, Dark Rock Pro 3 etc), or 240mm AIOs like the H100i v2

yeah that cooler i wasn’t sure about i was thinking about the 100i v2 from corsair but couldn’t find it on there would that be enough.

if i went with the i5 what would be the best option for cooling, i’d like to get an ok overclock but i don’t like the look of a big air cooler, so i’m thinking probably an aio

Looks like your current case doesn't support more than a single 120 or 140mm rad or most tall air coolers so you'll need to swap that out most likely.

what are the differences between them? also, this might sound bad haha, but i’ve always loved the red and black colour scheme so i’d like to stick to that if i can.
