GPU is a ASUS 1060

Cpu Ryzen 3 1200

Gigabyte A320MA-M.2-CF

Memory  8GB DDR4

It's not really as simple as X card = X value, personally I have a GTX 1060 overclocked to 2150 MHz. 

Overclocking nets if more fps for free but it does cost time.

To be honest, because your card has GPU Boost 3.0, it already overclocks itself without you doing anything. If you check the quoted frequencies for the card and then check how fast it's actually running in games, it's likely running much faster than quoted in the specs, thanks to GPU Boost 3.0

I have been told by salesmen that if you overclock a 1080 TI for exemple, you void the warranty . Any truth to this. ?

they also have no way to check if it was overclocked anyways.

Overclock your CPU first. The R3 1200 bottlenecks a 1060 at its default clock speed in CPU heavy games.

Oh shit, A320 chipset. Well RIP. Don't bother overclocking the 1060 then.
