I’m looking to build a desktop for moderate  gaming (1080p 60hz, medium settings) and medium productivity (Word, Excel, OSM editing, some light 3D modeling for fun).

I already have an old, large, well maintained ATX case with an older version of the listed PSU and plenty of case fans. It’s basically a larger Corsair 270R that has 8(?) expansion bays down the front of it, so it can handle a good deal of parts. 

 

My desired cost is $750 US. Thanks

More bang for the buck, and you'll especially want a Radeon GPU so you can make use of that sweet freesync on your monitor. 
Freesync makes a massive difference at ~60fps gaming

As you went for intel i tried to squeeze in a coffeelake i5, too bad there aren't any B boards yet, since you have a freeSync monitor I'd go for RX580 instead of a 1050Ti

you can get windows 10 N for $25, same thing as regular windows, just without media feature pack that you can always download from microsoft.

matx will work fine unless you need more than 4 pci-e connectors. that 580 should work fine.

Sapphire, GIGABYTE, ASUS, MSI and XFX are the manufacturers I would go with. Avoid PowerColor like the plague.
