I would get the 7700k at the sub $300 US on newegg and then look back into upgrading this time next year or even into spring 2019. Unless you start getting super crazy with your editing the 7700k should do a fine job. Also as Intel doesn't rely as heavily on ram speed stick with what you have for the time being too, hopefully when you come back to upgrade next year the DRAM shortage will have resolved and prices will be more reasonable.
