On my z270e board when I boot I get a message saying there is a problem with the CPU fan it says to adjust or disable the fan speed low limit

If you have an AIO pump on the unit make sure your fan curve is not too low for the pump to start some AIO's depending on the unit you have require full 12V.

I've had this setup running for a couple of weeks I clicked resort to default settings on my mobo and now this is coming up I don't remember what I did the first time

Go into the BIOS and check the fan curve you have setup for the pump.

That looks to be on the AIO pump header right now, do you have the pump cable connected to the CPU header?

Should it really matter if I had it working before?

And I honestly don't know/cant tell this my first time using an aio and I don't remember how I did it

By defaulting it could have changed all the settings so you will need to go back and reconfigure them for your setup.

As suggested check your AIo's pump connection first, if it's connected to the CPU header make sure it's setup so that the fan curve is high enough or to just full 12V to ensure it starts.

If you don't have a header connected to the CPU_FAN header, you need to set "ignore" under the monitoring header for CPU fan speed. Asus boards will not boot until there is something spinning on the CPU_FAN header, unless if you you explicitly tell it to ignore it.
