Personally, I'd go with a single 1080Ti over 2 1080's any day of the week. More cost effective, more than likely better performance. SLI scaling is all over the place and while yes, in some games you can get a sizeable FPS increase, in other games you could actually get a decrease in FPS over a single 1080. SLI just isn't worth the hassle unless you're the type of person willing to tweak and mess around setting things up before launching every game. Even then, you'll still come up with problems. 

Looks pretty ok, but I think one 1080 would definetely be suitable for 1080p 144Hz. :)

Already bought the motherboard, ram and cpu. 

I removed 1 of the 1080s, maybe one day I'll bring a 1080TI.

Why not using m.2 ssd? 

Case is a matter of style. 

Monitor I need 2 for multi tasking, and I'm playing FPS so I need small screen (24-27'') and at list 120hz.
