Is this good?

I'm aiming to run competitive games 144fps/1080p and any other game 60fps/4k

Psu is overkill even when overclocking ryzen but in my local store it's only 30 euros more expensive than 650w. (Future proofing) 

Is the mobo good enough for this build? 

Do i need to overclock those tridents for optimal performance with ryzen?

I can't find any fault with it.  You can OC the Ram and CPU when you have it all set up using the BIOS on that MOBO.  Paired with the 1080TI it will be pretty bad ass.

I'm pretty sure you can't overclock Intel's unlocked "K" processors with the B350- B250F motherboards but i don't know about Ryzen.

Check his link.  He has a ryzen 1700 and an AM4 b350.

If it's just gaming a 1600 or 7700k would be a better choice. I'd also recommend a Celsius s24 instead as it's just as good for cheaper.
