1700 isn't future proof. All Ryzen CPU's stop at the same spot when it comes to gaming.

in the future more games will use more cores, like BF1 for example

plus he can also do other stuff like streaming/video editing or some other productivity stuff

Future proof as in games are getting more and more multi threaded espicially with Intel going to 6 cores

We've been saying that for nearly six years and it's been the same. You're also forgetting single-threaded performance which Ryzen lacks a bit of.

Z270 supports overclocking while the rest does not.

Games will never be fully multi-threaded. Not every function can be split. BF1, as @deXxterlab97 mentioned, doesn't have many multi-threaded functions. Almost everything has to be done in sequence and unbroken. The only functions that are multi-threaded are building physics and weather as DICE didn't need them to be super accurate.

So long as I don't care about overclocking the cpu or ram, any of them chipsets will work for 4k with out a any fps drops?

H-chipsets also allow XMP to be used for RAM overclocking.

Technically the 7600k will handle 1080 Ti SLI although it will bottleneck them, the 6850k would be good in my opinion because it is going for about half price (around $450 CAD)
