Can someone please explain this to me. 

 

At 3minutes20seconds in the below Pauls Hardware video he talks about selecting USB to install Windows from vs. selecting UEFI USB.

 

 

QUERY:

1. Is what he says correct that selecting this seemingly innocuous option will have a permanent effect on your boot times?

2. Why is this? 

3. Surely once the boot drive is selected and control is handed over to the operating system, everything should work equally, is this not the case?

I haven't tested this myself as I'm running older OS. It might have something to do with how Windows 8 and newer load.

UEFI is motherboards interface/firmware. By selecting that option, he tells mobo how things should be done from that point onward. I don't know details, but that selection is mostly about compability with USB stick itself and USB ports on mobo. It might be that on that particular brand it changes some settings permanently allowing faster boot times. You should be able to do said changes later yourself, by tweaking options. This is something that would need testing with multiple boards and in more detail.
