They are the same price near enough so im wondering if there might be something that isnt very good about the specific m.2 ssd I linked

M.2 is a form factor.

The m.2 ssd he linked still only uses SATA, so it'll perform the exact same as an equivalent 2.5" SATA ssd.

All of the SSD's are SATA; M.2 is a form factor. The M.2 drivers are not faster; they're physically the same as their 2.5" counterparts. NVME is a protocol that can be implemented over M.2 that is indeed faster, but none of the drives are NVME. The 275GB MX300 for 80 would be your best option; it's more reliable than all of the drives you've listed other than the SU800 (40nm 3D is far, far better than 15/16nm planar) and is cheaper from a pure storage/money standpoint. The SU800 has a massive pseudo-SLC cache that's great for consumer workloads, though the MX300 has a respectable one as well. The others suffer more from the normal drawbacks of TLC flash. SL308 and Force are faster outside of steady state but not significantly so and don't have the same advantages of the MX300 and SU800.

Which one would you recommend?, im also looking at a wd blue 250gb and samsung 850-evo 250gb if they are any better.

MX300 275GB for 80 is your best option. 850 Evo is a great drive but unless you're getting it for under 90 probably isn't worth the upgrade.

I mean what are you going to be doing on the SSD? If it's just general consumer stuff then I'd say stick with the MX300.

It will hold the OS and games most likely
