Which setup should I use?

If you're using an NVIDIA card then just ignore the FreeSync feature. Monitors that support FreeSync will just work like any other normal monitor on an NVIDIA card.

If you're expecting it to look or feel different, it won't :P the only difference is maximum capabilities. When you get beyond a certain resolution/refresh frequency, HDMI can no longer be used, while DisplayPort can. That's the difference. If you're not beyond that point and still have a choice between HDMI and DP, then there's no difference between them.

So, I was planning on making an upgrade to my room and improving my gaming setup a little. I was considering whether I should just buy 2 ultra wide 144hz monitors or 3 full hd 144hz monitors. The thing is that I'm going to be learning professional video editing and 2D and 3D modeling, so I really don't know what would bring a better professional and gaming experience and would be most affordable. Also, have in mind that I have an Nvidia video card, so I want to know if monitors that use FreeSync would make for a decent experience or if I would have to shell out more money to find a screen that's compatible with G-Sync. Keep in mind that I would not buy all the monitors at the same time, so I have to worry about whether the display I choose to be my main will be decent on its own. I'm currently using my 40" TV as a display through HDMI. I'm eager to see what DisplayPort is capable of. Thanks for the attention in advance.

The 21:9 will be 2560x1080p. Do you have any displays that you would recommend?

It would be more immersive if I was going to play a racing simulation, right? Then again, I don't know if my video card has 3 DisplayPort slots. Would there be any noticeable difference at the image quality if I choose to hook up one of the displays through HDMI?

id say so, also i love the more monitors for when u use your rig for something else than gaming you could like watch netflix on one monitor, watch downloads on another, and look up dank memes on the third

I like this idea. And considering there are many old games (which I still play quite frequently) which don't have support for 21:9, that could be a problem. Although I wonder how GTA San Andreas would look in that setup. What about GTA V? You'd be nearly invincible due to all of the FOV you would have.

Movies will look better on a 21:9 monitor as movies are shot in 21:9

When you get beyond a certain resolution/refresh frequency, HDMI can no longer be used, while DisplayPort can. That's the difference. If you're not beyond that point and still have a choice between HDMI and DP, then there's no difference between them.
