So as the title says , this is my first build and I need some help. For the last month or so I have been watching a lot of videos and reviews and reading a whole bunch of posts about PC building and parts to get a better understanding of what I am building. Here's is what I got from all this research and I am not sure about any of parts.Lastly if any compatibility issues with the case or parts are there please mention them. It will be greatly appreciated if an explanation ,for why this part specificly, is provided with any part suggestions Please read the full post and thanks in advance for all the help.

PCPartPicker part list / Price breakdown by merchant

CPU: Intel Core i7-7700K 4.2GHz Quad-Core Processor  ($338.34 @ OutletPC)
CPU Cooler: NZXT Kraken X62 Liquid CPU Cooler  ($158.99 @ SuperBiiz)  - (Would any air cooler be capable of sustaining a 5.0 GHz overclock or is it too much to ask)
Thermal Compound: Arctic Silver 5 High-Density Polysynthetic Silver 3.5g Thermal Paste  ($7.35 @ Amazon) - ( is it needed since if I read correctly the x62 comes with preapplied paste)
Motherboard: Asus STRIX Z270-E GAMING ATX LGA1151 Motherboard  ($186.99 @ SuperBiiz) - ( Overkill or Not)
Memory: Corsair Vengeance LPX 16GB (2 x 8GB) DDR4-2400 Memory  ($114.99 @ Newegg)
Storage: Western Digital Caviar Blue 1TB 3.5" 7200RPM Internal Hard Drive  ($47.66 @ OutletPC)
Video Card: Asus GeForce GTX 1070 8GB Video Card  ($408.90 @ Amazon) - ( Does it make sense to get a 1080 )
Case: Phanteks Enthoo EVOLV ATX ATX Mid Tower Case  ($129.99 @ Newegg) - (Almost every review out there says this is probably the best MID tower case out there -especially the tempered glass one - , how true this  and what are better/similar alternatives within $100-$200 price range)

PSU: No idea what to get ,  I just follow the tier list blindly. I am completely lost here, like do I need a fully modular or even semi modular PSU. Why would I get a Seasonic X instead of corsair AX or AXi for example.

Total: $1393.21

Relevant Information

1. Budget & Location

My current budget is $1500 ; however I am willing to go slightly above budget if it is necessary and will offer improvement I will be buying almost all the parts from the US

2. Aim

This system will be used for all sort of stuff. Lets say:

30% Normal Usage - Web browsing , YouTube , Netflix , Office ,etc.

25% Programming (including Machine Learning , AI , Neural Networks and such applications )

30% Gaming - I would like to run most games on relatively high settings with either 1080p or 1440p. I don't need to run AAA titles on ultra or anything ;however, I don't need to feel like am playing on a more expensive Xbox or PlayStation

10% Graphic Design and Video Editing - Small stuff really nothing extreme just mini personal projects from time to time.

05% Streaming - It might not happen for months or I might want to stream for 3 hours while playing games.

3. Monitors

I am planning on running  a 2-monitor setup. However, since I don't have the money for another monitor , initially  I am going to run a single 1080p monitor. (Any suggestions for a relatively cheap and high quality 1440p monitor are welcome)

4. Peripherals

Logitech G900 Gaming Mouse

Corsair K70 LUX Gaming Keyboard

5. Why are you upgrading?

I have been meaning to build a PC for ages , but up until now I needed have my rig on the go , so I always opted for high-end expensive laptops ,but they have always failed me in someway or other ( battery issues , hardware issues , bad design , bad decisions , etc) . Now , as ultra books and small laptops are getting relatively strong and efficient , I made the decision to get a cheap small ultra book and have my own PC at home

6. Spare Parts

I have like 3 - 4 old laptop hard drives that I can use that range in size from 250 GB - 1 TB and a single 512 GB M.2 Samsung SSD from my latest dead laptop.

7.Overclocking

Ideally, I would like to overclock the 7700K to a stable 5.0 GHz without any issues. So , any suggestions for the cooling option or for overclocking in general would help a lot.

Grab a 1080 for 1440p!

Rest of the parts are quite well chosen, HOWEVER if you have even a 10% use case for video editing and possibly 5% or more in the future streaming, get a Ryzen 7 1700.

Can you please mention why would I replace  my parts with yours since I don't really see why I need to get the x52 for example over the x62  ; the only thing that makes sense for me is the ryzen 5 because of the streaming and editing stuff

Offers pretty much the same cooling for less $$$ - Also an SSD is like the single best upgrade you can make - The DDR ram is CAS 14 which offers a high chance of it being Samsung B die with Ryzen loves, high ram speeds really up ryzens gaming performance. 1440P is a big improvement over 1080P and well worth the extra $150 for 1080 GTX for smooth frame rates

Thanks , I will consider the ryzen suggestions although my 15% streaming and editing  could be much less thinking about it now
Already have an 512 GB M.2 SSD as I mentioned do I need more ?
Is the difference between 1080 and 1440p gaming really worth it?

The board is also quite important as it allows BCLK over clocking, there's only a handful of Ryzen boards at the moment that support that (mine doesn't!)
