If you have a mac, use Garageband. It's the best free DAW out there by far.

I use Tracktion 4. It's old, but very easy to use, absolutely free, and supports simultaneous track recording to infinity- something I need when I usually have six to eight inputs at once. (4 drum set mics, bass, guitar, stereo piano). Tracktion 5 is also free now, and I'll be upgrading soon.

You can also look into the free versions of Personus Studio One or Pro Tools First, although the Studio One free version is a hell of a lot better.
