Yeah, sure. I used it a bit in the past. What's the problem?

Works pretty well for most arcade games.  What issues are there?

No problem, I was just wondering how to go about setting it up.

OK, but are there any "known but not documented" issues? I'm worried on how to output sound mostly, and this is a pretty big project for me so I want to do it right.

retropie is pretty good out the box, the only "reproducable" issue i can find is when you also have kodi installed, kodi REALLY dislikes exiting back into the retropie UI, but a simple reboot can fix that :P

Oh OK. Sounds good then, I'll work on the software side of things tomorrow. I'm building a "smallish" arcade machine, and I want it to be as professional as possible. I would like people (non-techies) to be able to come up, turn it on and play.

Nope, RetroPie is super easy and user-friendly. I believe you can set sound output to either the 3.5mm jack or HDMI via raspi-config.
