It seems like every time I try to play a game online my NAT type changes. I would like to know if it's safe to keep NAT type open on my router (a Netgear R7000).

You should be fine.

EDIT: As long as UPNP is enabled, NAT type should not matter.

My native language is C++

My UPNP is on and yet my NAT type in everything is moderate or strict and it's causing issue with my mp games

That's weird. With my ASUS DSL n55u D1 and UPNP is working fine. Maybe try to open the ports manually?

Thats going to be my next step.
