I'm completely new to Fusion 360, in around hour 5 in trying to model this shown in the photo I stumbled into this problem: I'm going to extrude that one big triangle made out of 3 smaller triangles, then put a chamfer or use the draft from the modify menu to make it look somewhat like a gemstone. But the I still need it to be a circular object. how can I "cut" the extruded triangle body after I put a chamfer or draft it into a circular object while still having those modified features? that blue gem thing is what my end goal looks like.

Also can you refer me to resources in learning fusion 360 outside of youtube?

TLDR; How can you use other bodies to "cut" down other bodies intersecting it in fusion 360?

Never used Fusion before, but it is loosely based off of Autodesk Inventor... In Inventor you can use the (cut) extrude feature do a revolving extrusion of a selected profile around an axis. Just put a construction axis in the center of the triangle, with a plane off that where you'd sketch the shape you want cut out.

Let me unpack.... I need to put a construction axis on the center of the triangle.. (how?) the from that axis somehow create a new sketch (how?) then draw a circle from the center (how?) that will somehow cut the body to the shape of the circle. Sorry for the hows I am really super new to this.

Just downloaded Fusion to check out how it functions, so this may be a bit off...

The axis and planes are both in the construct sub-menu, how you choose to set them is going to depend on your drawing, there are several options for each to choose from.

Axis thru two points is likely the easiest for the center, one in the mid of the triangle and one at the point.

Plane thru three points is likely the easiest for the sketch plane, pick a bottom point of the triangle, mid point on the opposite face, and the top point to have a centered plane.

Sketch what you want revolved onto the plane, then go to Create > Revolve, pick your axis and sketch, and choose cut in the operation drop box. This spins your sketch around the axis removing any existing model that is in the way.
