Using this as a reference

why is it as shown with the reference some games can still be played even though the card has less Vram than the required amount. E.g GTA V uses all 3gb on the 3gb card but around 4gb on the 6gb card? I heard when the card doesn't have enough Vram the game is unplayable. Is the reason why the 3 gb card can still play because the game is using the system RAM?

Because VRAM is used very inefficiently. Games will just use as much VRAM as they can, but once you don't satisfy the minimum requirements you start to see stutter and horrendous performance.
