Have a processor need suggestions for use

Another option is maybe make a ESXi server out of it and host a couple VMs, or pfSense router.

Well its a socket 771 so you could maybe build a portable LAN rig with it or make a small file/Plex server with it as well.

I was considering using for a Plex server but I have other chips that would be more suited for that use. Would it be any good for folding at home?

Not really, it's an older CPU and only has a passmark score of around 4,000 so you wouldn't get much out of it with folding. You can if you really want to sure, toss in a cheap mobo and some RAM etc. into a small case and you're good to go.
