few rule(s) of thumb(s)

I absolutely need the I7 6700k for all the software animation shit that i do.

gigabyte gtx 1060 g1 (3gb or 6 gb depends)

corsair air 240

evga or corsair 850 PSU

16 gb corsair vengeancw lpx 2666

samsung 850 evo 250 gb

no HDD

Only 250GB storage? That's really low

Main:  1650 v2   @ 4,6GHz   -   X79 Deluxe                -   GTX 1080 @ 2000MHz   -   24GB DDR3 @ 2400MHz / CL10

Side:   i7-4790K @ 4,5GHz   -   Maximus 7 Hero        -   GTX 1070 @ 2114MHz    -  16GB DDR3 @ 2666MHz / CL12

i think you're fine but i would still wait for zen. if the rumors are correct then the 4 core 8 thread variant (6700k competitor)  will only be around 150 bucks. (im not entirely sold but im not upgrading to skylake right before amd's new lineup) and with ces this week they should be making pricing announcements, so i think it's worth it to wait a tad longer and see if Intel pricing gets more competitive before you break your piggy bank

If you can do $100 more, I'd say you should try to squeeze in a cheap-ish HDD for mass storage. You may be able to make a 250 GB SSD work by uninstalling/reinstalling games often, but I think since you're also doing some productivity work on the system you'll go through that space quite quickly. Of course, it's just as easy to throw in an HDD later on as an upgrade, but that may come sooner than you think.

You don't need anywhere near 850W for that setup. A 550W is more than enough.

What cpu cooler ? Just be aware that most air coolers won't fit in the Air 240 as it only has about 130mm (From memory) of clearance. You would either need a low profile one which would mean no overclocking or a water cooler.

Same goes for the gpu. Just be careful with the height of the card as you might have issues with the side panel. Some taller cards like the MSI Gaming X might be too tall as the card extends past the top of the bracket. An EVGA card should be fine though.
