If you're playing at 1080p and don't care for maxing out games, then out of those 3, I would go for a 1060.

A 1060 would already be overkill if all you're shooting for medium to high settings at 1080p.

For most games, there's little to no difference between a desktop i5 and i7.

Battlefield and Call of Duty would most likely need to be dialed in, but you can always consult the developer's web page to look for recommended system requirements. I know that your build is fine for Rocket League and Overwatch, but I do know that you will have to adjust it for BF 1 (I have never really played Call of Duty and don't know the sys. reqs. off the top of my head).

All of those games will play on ultra with that setup, there are only a few games that setup won't max out (ARK, Crysis, Witcher 3 with hairworks)
