So i have the GTX 1070 Strix, it has a single 8 pin connector for power and it looks like there may be a small spot next to it that allows someone to add maybe a 6pin connector on it for extra power. Would adding a 6pin connector be good for overclocking even more? or dont even bother?

If there isn't an actual connector next to the 8 pin to start with, simply soldering one on next to it won't work.

I enjoy buying junk and sinking more money than it's worth into it to make it less junk.

If you mean connect points to connector, those are because GPU PCBs (like most of other mass manufactured PCBs) are made in assembly line. The line is made so that PCBs of several models are running there at the same time. Then robots just solder in the correct stuff for each model using same base. This process has been covered in few mobo reviews and some factory tours.
