That's a pretty nice mid range build with a nice upgrade path in the future. Only thing I might suggest looking into is an rx480 as new testing shows that it's beating the 1060 in most gaming benchmarks. Since it looks like you might be doing some overclocking and you want a little breathing room for future upgrades, I'd suggest adding around 100-200 watts to the TPD shown on part picker and looking at some corsair or evga models.

i7-6700k | Cooler Master 212x | ASUS ROG Strix 1080 | 16 gigs Avexir Raiden Green RAM (because plasma tubes always improve performance) | ASUS Z170 PRO GAMING/AURA | Phanteks Enthoo Primo SE Green

looks ok to me. That i5 is overkill, and you could get by fine with an i3, but more power than necessary  is not necessarily a bad thing .

no it isn't, games are already starting to fully utilise an oc'd i7, i5 would be the minimum I would say now, especially if you still want to be gaming in 1- 2 years. Hell I would even say people should be looking at X99 now, but that's expensive

I have only got the ram so far. and and am looking to spend £600 to £700

That's a shame, I would advised an 1151 rig to take advantage of newer tech and DDR 4

Theres a few prices missing from your original list, ive set the ram to "purchased" but noticed theres no price for the optical drive and windows. However, 480 has caught up a lot of ground with 1060 and will probably be performing better soon enough, so I can't recommend a 1060 over the 480 any longer:

550w would be fine, however don't cut corners, a poor PSU will kill components when it fails

EVGA G2 are about the no1 recommend on here
