Will this work?

I just need a second opinion, if ive read and researched everything correctly everything here (expect gpu) should work together right? I know an i5 is better for a z170 board but this should work for a cheaper option if im correct. Can anyone help please and thank you

Absolutely, that all looks good compatibility-wise. You'll want to double-check that the 6100 doesn't already come with a stock cooler, though, because you can save yourself $19.75 if it does (I'm reasonably sure it does). Unless you need one for some other purpose?

Why an i3 on a Z170 mobo? You can't overclock it so get the cheapest one that supports it. Also, a 550W PSU is completely fine.

also, you don't need a 750 watt psu unless you plan on sli 1080 anytime soon

650W is enough for 1080 SLI.

That'd be fine on a 450W PSU.
