Sadly I can not afford the 6GB, since all my videos were CPU render

Then the 1060 3GB might be best. Use Shadowplay for recording and whatever software for rendering. Rendering is CPU-bound but editing is GPU-accelerated with the caveat being VRAM limit.

The only thing I want it to run is CS:GO, GTA V and league of legends :P

and maybe some other good games like Assassin's Creed

You should be okay. Not many games exceed 4GB (apparently BF1 uses 3.8GB for 1440) and you can always lower AA to make things easier.

4K? You'll be fine with the 1060 in any case.

Since you gonna go locked again, don't you think you gonna run into limits rather soon again?  I see no real big benefit swapping current setup vs intended setup. YOu will ahve some more performance but would say thats not worth the dosh relativly speaking. Despite budget issues, maybe you should start with a solid base without new GPU to work from and go atleast unlocked. That can increase the usable lifespan for several years.

Meanwhile you can save up for a decent new GPU.

I decided to build another computer, using the intel i5 6500 and Gigabyte LGA1151 Intel H110 Micro ATX DDR4 Motherboard

I know how tempting it may be to build a new computer once you have parts picked out, but I'm telling you now you won't see much if any benefit.  According to all the sources I can find with a quick Google search you'll actually be losing performance in both multi-threaded and single threaded applications.  The only place you'll really be benefiting is power draw and DDR4 (which given the CPU power loss is not worth it).  You'll still have the weak link of the build, which is your graphics card.

What I try to say is that you might be better of going with  a Z170 board and a unlocked CPU. It gives you in gaming more performance + usable lifespan. And if you go with an i7 (6700k) you might get a very decent bump in your rendering aswell. And because you are on budget, it might mean you cannot go new GPU currently. Obviously your choice, but think your current plan is no real upgrade for the money you spend on it.
