MX300 525GB M.2 SSD doesnt show up anywhere

no, only one - since they are both SATA

but, you could add a PCIe one and use them both on the same adapter

and technically if i got 2 of those i could use them both and 2 gpus as well since i have 3x PCIe 4x slot and 2x PCIe 16x slot right?

the video cards use PCIe lanes from the CPU

 

the x4 slots use PCIe lanes from the chipset
