i have a xeon w3350, with what gpu will i bottleneck??

depends on the load. some programs are more cpu intensive others more gpu intensive.

again that depends on the Program. its not a clear cut answer. an rx 480 will be bottlenecked some of the time. an rx 470 maybe too, i don't know depends on the game.

Is it OCed or not? These 1366 CPUs got to 4GHz rather easily and then even a GTX 1070 wouldn't be a bad choice. However, I'd rather go for the GTX 1060, as there is no need for more on 1080p.

You should overclock it. Anyway the 1060 or 480 is the best option of you. If the 1060 is less than 25% more over the 480, go get the 480, otherwise the 480 is the better card.
