i have an old cpu its an i5 2400 and im planning to buy a gtx 1060 3gb, so will it bottleneck the gpu?

It may on more CPU intensive games, but I don't see it doing it by that much.

can you mention games that you consider to be cpu intensive

I've already done some research, and I'm pairing that same cpu with an RX460.  I will get basically zero bottleneck so you should be fine with the 1060

Anything open world/environment, RTS, or likes to use physics out the rear.

do you think that it can handle GTA 5 or some old open world games like prototype and older AC games?

Anything older than a few years should be fine while GTA V may have it's moments but it shouldn't be hiccuping all the time.
