If I update to the Windows 8.1 preview from Windows 7 will I loose my stuff?

Not if you chose the correct upgrade option. It will tell you....choose wisely.

also I think you need to go Win 7 -> Win 8 -> Win 8.1

Like Games, photos, etc...

When you upgrade it is always recommended to do a back up of your whole PC just in case something goes wrong and you loose everything. But when you upgrade to a newer version of windows you don't loose any of your files, games, photos, videos. etc.. That being said you may have to update some of your programs so that they can be able to run on Windows 8 without a problem. After finishing the upgrade to Windows 8. Windows will automatically tell you which programs need to be updated.
