Would recommend dropping your CPU to a 6600k and upgrading GPU to 1070.

You would still benefit greatly from this. You will lose very small amount of time on the rendering, maybe a few minutes, but gain much better overall graphics performance while gaming.

Since you're already going for pretty high standards with your parts, I would recommend 16GBs of RAM just to be extra-future proof.

You could also go down to a 6500 or 6600K and get a 1070 instead.

Most of the tasks id be doing are...

Video editing

Gaming (heavy modded minecraft, csgo, starwars battle front and maybe more later)

Multi tasking (i sometimes use upto 10 programs at the time)

Browsing the web and watching movies.

Host servers sometimes

Stick with the i7. It is easier to swap out the gpu later on than it is to change the cpu.
