Generators are just really troublesome, you can get a 1900W inverter for $200 USD

First off what kind of power system does the RV have and are you always going to be relying on portable power or will you have access to a utility connection?

 

I've had HTPCs in the last three RVs I've owned, current one has a 6000 watt Cummins quiet diesel generator but I've used both DC-AC inverters and DC-DC PSUs in the past. 

 

If you have the battery capacity for a DC to AC inverter go with a pure sine wave model, a portable unit will work just fine but a hardwired RV unit with remote monitoring and a charging circuit would be ideal.  If you have a onboard generator I definitely recommend using a UPS because large appliances like AC units and microwaves can cause a huge voltage drop when they first turn on.

If you're going with a portable generator I'd recommend a good inverter model like a Honda EU series, quiet and plus puts out really clean power.

 

Another option may be a DC to DC PSU, not sure if there's one large enough to fit your needs but years back I used two of these 250 watt units to power a rig with a C2Q and a ATI GPU.
