I'm looking to build a gaming and editing PC but the editing will be very minor editing and the gaming will be all kind of games at high setting... What I am wondering is: 

 

Should I pay the extra for an i7 processor or do I stick with an i5 6600k?

You don't have to if you don't want to. As much as people will recommend an i7 all day and night for video editing, the i5-6600K is still going to be pretty good at CPU-based workloads. Maybe it's not as much as an i7, but not bad at all by any means. Also, as long as you pair it with a decent GPU, you should still be getting some excellent gaming performance.

What GPU are you planning to pair it with?

i5 6600k should sensible. Only time you will use it's strength is for encoding and if you are doing it rarely, the i7 wont make much impact to you if we are honest.

If you are planning on buying a 1080, then don't buy the i5 and bite the bullet and get the i7, as EVERY SINGLE i5 BOTTLENECKS THE GTX 1080

Fairly sure that is game dependent and if he experiences a bottle neck he will still be crushing games to even care.

An overclocked 6600K can bottleneck the 1070 up to 10-15% in CPU intensive games such as GTA V... Even in overwatch the 6600K bottlenecks the 1080... Well, TBH, it makes no sense at all, to spend $250 on your CPU and $700 on your GPU...

Did I not just say it is game dependent. I'm sort of seeing a trend with LLT boards.

Despite this the internet is still arguing over it because again its game dependent and it actually makes a lot of sense depending on what you are doing and what resolutions you're working with.

So if I'm using an rx480... And I want to game on all kinds of games ranging from highly dependent games like gta v to very weak games like... Let's say... Happy wheels! And I also want to record my gameplay... Which processor will aide me best?

If you can, get the i7... Always get the best you can afford for your money, so that it will last you longer.... If you have the money, consider buying a 5820K with an X99 Board as it is even better than the 6700K...

The i5 will be fine even while encoding for streaming if you felt like it. I have a crappy i3 pc around we've used highly gpu intensive software like Resolume decoding multiple video files in layers and recorded a second screen with OBS and it was able to do 60fps at 1080p.

Didn't I say that the i5 bottlenecks the 1080 EVEN in overwatch?(Not quite a CPU intensive game) let me make this clear... 

The i5 will bottleneck the 1080 in almost every instance...and the fact that in some games the i5 doesn't bottleneck the 1080 (much) doesn't change the fact that the i5 IS a bottleneck...

Unfortunately when I google the situation not everyone agree's and I did fact check it. Regardless in reality it has little impact on the fact you will be pushing more then 60fps and it has even less impact at 4k. So in the end nobody actually cares. I especially don't since the OP just said he doesn't have one so if you are looking for a pissing contest I'm not interested. ^^

Okay... So if I were to go for the i5 which motherboard would you recommend with that? And which motherboard would you recommend for the i7 as well?

Then the i5 IS a bottleneck.... You can't say otherwise, yes at 4K it might be minimal but the bottleneck will be present....

Well unfortunately I was focused more on the processor here. Not many motherboards have perfect reviews since forever. I'm not sure what your budget is however. But for my next build I'm going with Asus but I've been looking at 2011 boards. ><

Asus has a ton of black and red boards under their Maximus and pro gaming lines with fairly high ratings. Its based on what you want on there and willing to pay for it. Like Asus has a fairly crazy Maximus VII formula mobo with u.2 ex thats new.

Which i7? The 5820K?

As it's great for the price 

 

For the i7 5820K:

AsRock X99 Extreme4

Because it is the best "budget" X99 Motherboard

 

Or the AsRock X99 Taichi, if you want a black /white board
