When I try to open CS:GO, I get the following error:

Even still, I'd keep digging on that. The Display tab should have info about your GPU and it's driver but there's nothing there. See here for reference. Another cause could be an issue with Optimus. You may need to force the Geforce on in the Nvidia control panel, assuming it's now stuck on the integrated GPU.

What would I need to do in the Nvidia control panel to fix Optimus or force the geforce on?

Use DDU to remove completely your drivers then install a slightly older version of drivers and see what happens
