Is my PSU enough?

You could actually SLI three 1080s if you had an i5 and didn't overclock anything.

If you want to overclocked your two 1080s in SLI then I would grab a 750W/850W. If you don't want to overclock then the 550W for two in SLI is fine. For one you're more than in the clear. Keep in mind the GTX 1080 does seem to really suck power once overclocked.

Yes it's fine for what you have right now at peak usage... if you add another 1080 in SLI though it will definitely be puching the limits of that PSU at peak usage and I wouldn't recommend it... if you haven't bought the PSU yet, upgrade it to 650/850 G2/P2 PSU, and I'd be inclined to go with the 850W G2/P2 if SLI really.
