Cables included?

Well the PSU will come with all the cables needed, and the sata data cables will be with the motherboard, as for fans and other things unless you need a splitter for extras you shouldn't require any more.

the monitor will probably come with a HDMI, DP or DVI cable

I would get an extra HDMI cord if I were you.  I've bought several monitors, they usually only come with a VGA cord, though I did luck out with one that came with separate DVI and VGA cords.  

Other than that, the PSU has all the cables to power all the parts, and the motherboard should have at least two SATA cables.
