Most of the questions you have asked are answered in LTT videos, just browse the LTT channel and watch the videos. Linus is great at translating PC tech into english that can be understood by people who aren't technically savvy.

IDE - basic disk management protocol, select for maximum compatibility.

AHCI - more advanced disk management protocol, select for maximum performance or to enable more advanced features (e.g. RAID, hotswap etc.)

RAID - Redundant Array of Independent Disks. I'll let you google what the different levels mean (i.e. RAID 0, 1, 2, 3, 4, 5, 6 etc.) but in essence RAID is where you tell the computer to read multiple disks as 1 for various reasons depending on the RAID level chosen. The main reasons for choosing to run a RAID array are to either A, increase the speed of the array beyond that of a single disk, or B increase the parity of the data so that if one drive fails you do not lose any data.

Very true, but in hard drive land, its when you get more than one drive to agree to either at the same time but for a bit (RAID 0)  or  all out at the same time (RAID 1), then when they all go at the same time for a bit but one guy hangs back to make sure the others go (RAID 5), then when two stay back (RAID 6), then when two or more attack for a bit and then two or more at the same time attack with equal bits (RAID 10). I could go on man :D
