My thinking is going for stability and a professional workstation card like the Quadro for 3D Rendering and Editing. I have been back and forth on this subject a lot.

Not totally sure about this one, but it might be wise to go with an i7 6800k instead of the Xeon. Xeon's are more designed for servers, while the new high end SKylake i7's (like the 6800k) are more for professional desktop use. Linus' last video was about the four new chips, but focused on the top-of-the-line $1700 6950X:

What makes you think that Xeons are not meant for workstation builds ?

They are used in servers, but they are also good for workstation builds as you can get ones with more cpu cores than the desktop Broadwell-E range. They usually cost more though.
