Recover data from suspect computers?

I was wondering if anyone has advice on dealing with computers that may contain viruses.  I tend to be the go to guy with friends and family for dealing with computer problems, and most of them don't take care of their computers.  Most of the time I suspect a virus is the problem, so if I can't reset the OS I tend to go straight for a drive wipe and fresh install.  My question is, do you have any tips on dealing with potentially infected data?  What are the best ways to recover saved data.  If I were to hook up an old hdd to my system, what are precautions I can take to make certain nothing executes off the drive?
