That is a thing you can do, but the longer you go, the greater the chance of issues.  Make sure you get good quality ones that are well shielded, etc.  This is one time where despite being a digital signal, quality really can make a difference.

The reliability can be affected if your wire them together but it is possible, as mentioned shielded cables are what you want to look for, if you want a guaranteed solution 3M makes professional PCI-E extensions that are extra long if you need.

There's a ton of data in there, and a long enough cable could pick up enough interference to actually mess with the digital signal, flipping 0s to 1s and so on.
