An image in a video game or other type of program, typically 'sprites' refers to pixel art images. (like Mario from Super Mario Bros. on the NES is one of the most famous sprites)

It's a broad term and can mean more thing in a different context, but that is what most people refer to when they say sprite.

 

Sprites are made in raster image editors (as opposed to vector image editors) because they are made of pixels.
