What function in microphone is this?

I know there is some sort of function in micrphones and headseat mics that allow to to like make it unsensible to sound, what i mean by this if like the person listening to me wont be able to hear backround noises or like the fan if its on unless i talk. im sorry if i make grammar mistakes my english is not what im know for

You probably mean voice activation, where the microphone only activates itself if a certain level of noise is created.
But that is not a feature of a microphone. You can add it via software.

Another feature of microphones I should've mentioned is the direction of sound they capture.
Some only record the noise that is directly in front of them (unidirectional) and others record everything around the microphone (omnidirectional).

do you know the name of that in a mic to like search for them?

You can simply search for omnidirectional or unidirectional mics.
Some microphones are also able to switch between them I think, but I really don't know that much when it comes to sound. :P

The option that you want is called gate. It is device/software which will not let the sound pass through unless it is louder than selected threshold. 

Not sure about your application but there should be lots of free VST gate plugins on the internet
