OK, So you want a Xeon (my god why?) and a 1080?

Get a mobo that supports Xeon chips, a GTX 1080, some compatible RAM maybe, something for storage, a PSU that can power all that and a nice case to put it in.

If you're expecting more specific advice maybe provide some more details of what you want, and intended use?

Does you mum know you're here?

There's so many options.... You could just go to https://au.pcpartpicker.com and set your price range, and have a look at builds other people have done and pick something you like

on a side note should i wait for the 1080 or buy the 980ti, as the 1080 is more for vr (which i wont be needing)?

1080 is not only for vr, they are just marketing it as a vr beast. It is much better than the 980ti (25%ish) or even a titanx

P.S Good to see a fellow aussie

This is a pretty good 2k build only thing you might want to change is case because it is all about preference.

i did add the expected price of the 1080 although it is not confirmed... You can also change the cpu to a non-overclockable skew, change the mobo to b85/h170 and get rid of the cpu cooler.

Search it up for yourself.

I'm sure many other people on this forum would agree with me not to buy a V300.

That psu is junk as well. Spend less on the cooler and put it towards a better psu.

Then a Xeon and 1080 is overkill for the games you'd play on it. I can play the same games and never skip a beat on a $1000 gaming PC. You'll just end up paying for the things that you wont end up using. Impractical. There are tons and tons of $800-1000 builds over here, just skim through them.
