Polling rate is the number of times a mouse reports its position back to the computer per second. 1000Hz = 1000 times per second. Usually most gamers would set it at a high value, so they don't have the mouse skipping some tracking.

You should also keep in mind that having it super high is basically "overclocking" the USB bus (the "default" polling rate of USB is 125 Hz), and in some fringe cases can cause increased CPU usage or other anomalies. 500 Hz is a safe option and its extremely difficult even for the best of the best to see the difference between 500 Hz and 1000 Hz, let alone 2000 Hz.
