Well I don't play the most demanding games and if I ever want to play more demanding games, I will upgrade to a 980 Ti or something.

If you plan to get a 980 TI, forget about it and go for the GTX 1080 in May.

For some reasons, servers, many rendering software, office work, transcoding, etc all care about the cpu way more

No offence but that sounds dumb, this PC is for editing and such so the CPU is more important than the GPU. The 390 is the sweet spot card for 1440p gaming.

I'd get a heftier PSU to crossfire later, but that's just me.

I would wait for the new cards regardless, but your definitely good for light or moderate gaming as is.

 

I would say go for a bigger ssd and keep your current projects on it though

120gb SSD is going to hard press you to load much more than Windows 10, Office, and a game or two.  I'd up that to 240gb, or even higher.  If you still need the HDD, go with a 2TB model at least. 

 

The problem with 120gb SSDs these days, their small space aside, is that they use so few actual memory chips that bandwidth inside the SSD is severely constrained.    480-512GB seems to be the performance "sweet spot" these days.
