So im planning on either buying 2 120gb SSD. I planning on putting them into a raid array. If i get 2 120gb ssd is it possible to put that into a raid 0 array and then get a 1 tb hard drive so i could put a raid 1 array backing up the raid 0 array. Or would it be easier to just do nightly backups?

If you put the hdd and ssd in raid 1, you only get as much capacity as the smallest drive. It'd be better to do nightly backups.

Also, why raid?

I was curious i wasnt sure which was easier or which is more efficient.

What are you comparing? I only see one idea so far.

I think what you are trying to ask is, backup your RAID 0 SSD array with a single 1 TB drive in "RAID 1 with that RAID 0 array"? First, RAID doesn't work like that. But more importantly, you wouldn't want to have a normal harddrive in an array with an SSD in any form, first it probably wouldn't even work at all, second, if it did, it would KILL all of the SSD performance as the HHD will slow it all down. What you might want to do, is have the SSD RAID 0 array, and do a nightly backup to the 1 TB drive or something like that. Or have a 1 TB RAID 1 array to do backups too. But the SSD and HHD  will be in different arrays.

Hope that helped.
