So to make a long story short I'm in the process of converting my media library (Blu Rays and DVDs) to a digital format and I'm currently using Handbrake and it's tedious to put it lightly.

I just watched the video Linus put up comparing AMD and Nvidia GPUs with video rendering and it got me wondering if there is software out there that is like Handbrake but will be able to take advantage of my GTX 970 as well that you guys would recommend.

Page 5 has GPU acceelration, but you might as well read the whole thing.  GPU encode will always result in quality loss and larger file sizes than software encode.  I've been using my PC to re-encode all my files into h.265 which has saved me several hundred GB's of space so far.

Hi can I ask what is the difference between h.264 and h.265. I am new to this and just wanting to know. Thanks

It's a newer codec that uses a very efficient compression technique that can sometimes halve the size of a video with almost no quality loss.  At a very conservative setting, I've tried re-encoding a 18GB file and got it down to 1.7GB file size with almost no quality loss.  Depending on the source, you can expect about 40%-90% file size reduction.
