So I'm pretty confused with VR gpu's and stuff

 

I was going to go with a GTX980, however, will a R9 390x do the job?

Either GPU will be fine.

VR for both the Occulous Rift and HTC Vive seem to be aiming for 2160x1200 @ 90fps

So a 390x and/or 980 should do you fine.
