For my gaming / streaming rig I will be using i7 5820k with r9 390 GPU. I intend on having 16 GB (2 x 8) of RAM but I'm not sure which to choose. With DDR3/4 with some numbers, CAS and different "pin"  numbers I'm not really sure what it all means. I'm not the most PC savvy but i have a general knowledge. Any input would be helpful.

Thanks!

ddr3 and 4 depend on the mobo, most likely 3. otherwise just use pcpartpicker and pick your price because at those specs and fr gaming you probably won't see a difference as long as you get crucial or kingston or a decent brand and higher frequency is usually better.

if you're getting a 5820k it is only compatible with DDR4

unless you're getting into very serious content production (or other ram intensive tasks) and I doubt you are as only getting 16GB none of the other stuff (CAS and timings) will make any real difference
