I think you may be overestimating the hardware requirements for that setup. 

And older gen i3 would be more than capable. In general for a web server/NAS, more threads is better, so perhaps a cheap Xeon?

Unless it gets linked in the WAN Show, the Pentium is likely to be fine...  however, this may be near the limit of reasonable use for that CPU.  Really, you should be looking a the E3 Xeons instead of i5s for server work.  Haswell would even be fine with the E3 1231 V3(X99 would be more worthwhile if you want cores with cheap 6-core + HT Xeons.) should you desire to do more.

For the Best builds and Price lists here is a world where many points of the price have been predefined already for your convenience!

The Xeon E3 1231 V3 IS BETTER Than the Core i5 4690K and a Significantly better value for the non-overclockers or value shoppers.

If its just NAS usage then the G4520 is going to be just as fast. Samba does suck a bit of CPU as will software RAID and so will ZFS but it'll still be limited by the 1gbit/s ethernet rather than the CPU. If you start running servers on it then that is the point when you might want to consider somethingg faster, but it really depends on the sort of load you intend to put on it.

It's going to handle nightly backups of my family devices. For the server part, I only expect around 500 visitors per day and there will be no uploading/downloading.

They're a lot less powerful than a Xeon e3. They're not even in the same ball park -- the quad core atom is more like a pentium.

And my rating of the Atoms was worded badly. Of course they are way less powerful than a Xeon. However, I think that that CPU should still be more than enough for the described task, especially in the 8 core version.
