i was looking into the Gigabyte WindForce GTX 980 and it looks beautiful besides the ugly cooler behind the plastic and fans. You see all that copper which to me looks pretty bad. Could I grab a can of high heat black hammered paint and mask of the contact surface where the cooler touches the GPU die and paint the rest of the heatsink hammered black?

no that reduces the performance by a lot

The cooler is mostly made out of aluminium and not plastic.

The heatsink is also made out of aluminium and not copper.

But yes, you can cover it in paint. Obviously it will void your warranty. I don't know how much it will affect your temperatures, but I would guess at least 5°C.
