I need to dismantle my RAID 0, format each drive, and reassemble the RAID to do a fresh install of Windows. I'm hoping this will also return the RAID array to my boot order list in BIOS (so it can automatically boot again, instead of having to manually select it from the list of bootable devices). 

Anyway, I'm running ASUS X99 BIOS. Anyone know how to go about this?

Messing with the disks and arrays won't affect the BIOS settings. But if you still need to, just set the Sata-mode to RAID, save, reboot and go back and set your new array as the boot option #1 in the boot priority. Or better yet, disable everything else. Sata mode is under Advanced, and Boot priority under Boot in the UEFI menu.
